Description

Professional kitchens rely on sharp cutlery to maintain safety and precision during food preparation. The Browne 821 Sharpening Stone is engineered with silicon carbide, a material known for its hardness and rapid abrasive qualities. This 8″ x 2″ stone allows chefs to restore the cutting edge of dull knives by quickly removing metal and reshaping the blade profile. Because silicon carbide crystals fracture into sharp new grains as they wear, the stone maintains a consistent cutting speed throughout its lifespan.

The dual-grit configuration of this bench stone provides a comprehensive sharpening solution within a single block. One side features a coarse texture designed to repair minor nicks and grind down blunt edges, while the reverse side offers a finer grit for honing and smoothing the final edge. Measuring 8″ in length, the stone provides ample surface area for long strokes, accommodating large chef knives and cleavers used in commercial butchery or high-volume vegetable prep.

The silicon carbide construction is resistant to clogging when used with water or honing oil, ensuring that metal filings do not interfere with the abrasive action. Its 1″ thickness provides a long service life, allowing for repeated use before the stone requires replacement. By maintaining a flat and level surface, this sharpening tool helps achieve a uniform bevel on every knife.
